Non-stick Pullman bread pan in aluminized LS steel sheet, thickness 8/10. Ideal for giving the dough the unmistakable rectangular shape typically found in sandwich bread, toast bread, etc. Available in various sizes, both for the slice section, which can range from a minimum of 10x10 cm to a maximum of 15x15 cm, and for the length, which varies from 20 to 50 cm. The moulds are slightly flared and not perfectly cubic to facilitate removal of the product once ready.

Long sides and base are made from a single specially folded sheet of metal; the short sides are closed with a sheet welded to the body of the mould with 11 weld points, all done manually.

Sliding lid on rails, cut into the long side of the pan, ensuring a firm closure that is highly resistant to the internal thrust of the dough. The short sides of the lid are folded to form handles for easy opening and closing; the lid sheet is perforated to allow moisture to escape during baking.

The Teflon coating is an industrial process based on the spray application of DUPONT TDM200 Teflon with green pigment. This process is guaranteed for 2,000 baking cycles when properly maintained (read the use and maintenance instructions in the details section) and ensures professional-level non-stick properties, eliminating the need for natural or chemical release agents.

The aluminized steel sheet (LS) guarantees excellent heat transmission and great strength. It consists of a steel base coated with aluminium, which means the mould heats up more slowly than pure aluminium products but absorbs more heat and retains it longer. Moreover, thanks to the thin 8/10 gauge, it offers excellent thermal transmittance.

These pans are tested up to 280°C and are suitable for baking food products.

USE AND MAINTENANCE:

They must not be placed in a hot oven without product inside, as thermal stress deteriorates the non-stick treatments, reducing their lifespan. During handling or stacking, do not scratch the metal surfaces and/or the coating with abrasive tools or brushes. To remove bread or grease residues, use sponges or damp cloths, or wash with running water at max. 60°C and in any case with pressures below 10 bar. Low-concentration alkaline detergents may be used, provided they are suitable for cleaning articles intended to come into contact with food and do not contain aggressive substances.
